Yeasts are talented and versatile microorganisms with a millennia-old track record of applications in food production and refining. Some of them are even capable of building fats, and all they need for their natural performance are simple and readily available nutrients. We have cultivated specific yeasts that can produce the entire spectrum of fat and oil types found throughout plants and animals. By carefully selecting the right fermentation conditions and biological stimuli, we can steer our yeasts to produce any desired type of food fat – both known and new to nature.
